Grilled Vegetable Medley


1 red pepper, de-seeded and cut into 1-inch strips
1 yellow pepper, de-seeded and cut into 1-inch strips
1 sweet onion, cut into 1-inch pieces
1 whole zucchini, cut into 1-inch cubes
1/2 pound mushrooms
4 tablespoons olive oil
1 tablespoon minced garlic
1 sprig thyme, chopped
1/2 tablespoon kosher salt
1/2 tablespoon cracked black pepper
parmesan (optional)


  1. In a bowl, combine olive oil, garlic, kosher salt and pepper. Set aside.
  2. Add all of your chopped vegetables into the bowl with the olive oil mixture. Toss until evenly coated.
  3. Preheat grill to 350F. Set burners to medium heat.
  4. With your vegetables placed in the vegetable basket, place over direct heat. Cook for 3-5 minutes on each side until cooked to your desired doneness.
