- Royal Blue Stilton by Long Clawson: Long known as "The King of Cheeses", Blue Stilton is one of a handful of British cheeses granted the status of a "protected designation origin" (PDO) by the European Commission. Only cheese produced in the three counties of Derbyshire, Leicestershire and Nottinghamshire and made according to a strict code may be called Stilton.

- Roquefort Societe Bee: With Roquefort's fine, milky-white body veined with emerald green, and its well-balanced flavor, this cheese has been appreciated for generations.

- Valdeon: Named for the remote Valdeon Valley in the northern Spanish region of Leon, this cheese is made from a seasonal balance of cow, goat, and sometimes sheep's milk.

- Regina Blu: This new specialty from Paladin has an extremely mild and creamy flavor. Paladin is calling extra creamy Regina Blu, "the new queen of our blue cheeses from Bavaria."
