Millefoglie Al Marzemino by Perenzin: A cow's milk cheese of semi-hard consistency from the Alpine foothills, Millefoglie is soaked in red grape must for 10 days, drizzling into the core of the cheese and infusing it with a rich wine flavor. Grape residues cling to the characteristically dark rind, which is dried thoroughly, leaving a reddish hue behind.
Caciottona Capra al Fieno by Perenzin: This cheese has a semi-hard, compact interior of pale straw yellow color, with evenly distributed eyes of uniform size. A maturing period of at least sixty days is required in order to obtain Caciottona's soft and delicate flavor, suitable for slicing or chunking.
San Pietro with Beeswax by Perenzin: San Pietro is a cheese typified by a semi-hard, compact interior of pale, straw-yellow color, with evenly distributed eyes of uniform size. A maturing period of at least sixty days is required in order to obtain its soft and delicate flavor.
Vecchio Dolce by Perenzin: Made with cow's milk and aged for one year, Vecchio Dolce is styled after Grana Padano and Parmigiano Reggiano, but has an extremely sweet finish with a long lasting aftertaste that harkens the flavors of the unique Venetian pasturelands.
